At NIU Edible Campus, we believe that food should be fresh, nutritious, and accessible to all. As we continue our mission to create a living learning laboratory and help our campus community reconnect the dots between health, wellness, and our food system, we are excited to take our initiative to the next level—but we need your help!
Why Freeze Drying?
One of the biggest challenges we face in our commitment to sustainability and food security is ensuring that the food we grow is available year-round. Fresh produce is seasonal, and without the proper preservation methods, much of it has a limited shelf life. With freeze-drying technology, we can extend the life of our campus-grown fruits, vegetables, and herbs while maintaining their nutrient density and flavor.

Edible Campus Seed-to-Sprout Challenge
When 10 donors have given to the Edible Campus campaign, Karinne Bredberg's donation of $250 will unlock.
Edible Campus Sprout-to-Flower Challenge
When 20 donors have given to the Edible Campus campaign, Dr. Amy Jo Clemen's $500 donation will unlock.
Everyone who donates any amount to the Edible Campus Fundraiser will receive a digital recipe card, hand-picked by Chef Bryan Flower, NIU's Assistant Director for Food Systems Innovation.
