Illinois is rich in farmland. Yet many people in our communities suffer from food insecurity. Edible Campus seeks to address this by transforming parts of the NIU campus into a landscape you can eat. The goal of NIU's Edible Campus is to increase access to healthy, sustainable foods - both today and tomorrow.

Today, we're growing nutritious fruits and vegetables to distribute in our NIU dining halls and Huskie Food Pantry so all Huskies can feed their bodies and minds. But our gardens are more than just gardens. They're also living laboratories to study and improve food systems, promote innovation and prepare students for food system careers that make a difference far into the future.
Compost is the rich organic matter that prepares our soil to grow nutritious food. Your one-time donation to build a three-bay composter will help to enrich the soil year after year. A composter builds the nutrient-rich soil that is the basis for a healthy garden. Composting creates a virtuous cycle - turning yard waste and food scraps into next year's nutritious food.
By providing inclusive, sustainable access to campus-grown produce, we hope to help NIU and the community build stronger connections between food, wellness and the environment.

Edible Campus Seed-to-Sprout Challenge
When 10 donors have given to the Edible Campus campaign, Dr. Amy Jo Clemens's donation of $500 will unlock.
Edible Campus Sprout-to-Flower Challenge
When 20 donors have given to the Edible Campus campaign, Karinne Bredberg's $500 donation will unlock.
Edible Campus Halfway-to-Harvest Challenge
When Edible Campus receives $1,500 in donations toward its $5,000 goal, the $1,000 gift from Dr. Rena Cotsones will be unlocked.
Everyone who donates any amount to the Edible Campus Fundraiser will receive a digital recipe card, hand-picked by Chef Bryan Flower, NIU's Assistant Director for Food Systems Innovation. The recipe uses ingredients that are grown in NIU's Edible Campus gardens.
Donors who give $100 or more will receive a free Edible Campus t-shirt.
